From the shores of Mission Point to your kitchen,
Executive Chef Matthew Nelson shares a simple and delicious addition to your Thanksgiving table with this Sweet Potato Casserole recipe.

Ingredients:
Casserole
Sweet potato, cooked, peeled, and mashed: 4 Cups which is about 2.5 lbs
Butter, Melted; 1/3 Cup
Eggs, lightly beaten: 2
Whole Milk: 1/2 Cup
Vanilla Extract: 1 teaspoon
Sugar: 1/2 Cup

Topping
Walnuts, chopped: 1/2 Cup
Brown sugar: 1/2 Cup
Butter, Melted: 3 tablespoons
Shredded coconut: 1/2 cup

Directions:
Mix all ingredients to the casserole up in a bowl, then add into a casserole dish that is lightly grease (1-1/2 qt dish). Then mix all the toppings together and spread evenly on top of potato mixture. Bake at 375 degrees for 25 minutes. This recipe will make about 8 servings. Enjoy!
